Description
When Butterflies Gather brings together butterfly pea flower, delicate white tea and chamomile in equal measure, supported by rooibos, lemon balm, hibiscus and a touch of lavender. The result is a floral blend whose character unfolds gradually rather than allowing any one ingredient to remain at center stage.
In the cup, hibiscus transforms the blue of butterfly pea flower into a striking deep magenta, sometimes appearing almost ink-dark until the light reveals its color. The aroma is softly floral and sweet. A gentle tartness appears at the beginning of the sip before giving way to a soft floral sweetness that seems to bloom across the palate.

Steep: 4 minutes
The moderate water temperature protects the delicacy of the white tea while still allowing the botanicals to develop. Four minutes gives the hibiscus enough time to provide its gentle tartness and transform the liquor’s color without allowing it to dominate the softer floral companions.
